Coneybeare Honey sells both raw and unpasteurized honey. Raw honey is unfiltered and has never been heated. It is not available for year round sale. Unpasteurized honey is heated at a low temperature to preserve the honey in liquid form and slow the crystallization process. Our unpasteurized honey is heated to a temperature lower than 50C/122F to maintain natural enzyme levels. 


Crystallization is a natural process. The rate at which honey crystallizes can be affected by room temperature, floral source, pollen particulates and moisture content. To liquify your honey after it has crystallized, place the jar in hot water or microwave on a low setting trying to maintain a temperature below 50C/122F.


No, honey does not expire when stored properly. Its naturally low moisture content creates an environment where bacteria and other microorganisms cannot easily grow, allowing honey to be enjoyed for an exceptionally long time. To help maintain its quality and natural flavour, we recommend storing honey in a tightly sealed container at room temperature.


The floral sources in our honey change throughout the season, following the natural progression of blooms in our local landscape. In early spring, dandelions are among the first important nectar sources available to our bees. As spring turns to summer, the bees forage from a diverse variety of flowering crops, clover, trees, and wildflowers.


As the season continues, the available blossoms change, giving each harvest its own unique colour, flavour, and character. Goldenrod is one of the final important nectar sources of the season, providing valuable forage for bees as they prepare for the colder months ahead.
